Green vs Red Rooibos: What Oxidation Changes
Green and red rooibos come from the same bush. One step, oxidation, sets them apart, and it changes the colour, the taste, and how much of the antioxidant aspalathin survives. Here is the difference, plainly.
Pick up a packet of rooibos and you may be offered two kinds, red and green. They are not two plants. Both are Aspalathus linearis, the same needle-leaved bush from the same Cape mountains. The one thing that separates them is what happens to the cut leaf after harvest, a step called oxidation. Red rooibos is allowed to oxidise. Green rooibos is not. The colour, the taste, the price, and the chemistry all follow from that single choice. Red is the everyday cup, sweet and red-brown. Green is the lighter, grassier, scarcer one, and it keeps more of the antioxidant the plant is studied for.
The one step that divides them
After the leaves and fine stems are cut and bruised, red rooibos is left in heaps to oxidise, a process the trade still calls "fermentation" although no microbes drive it. Enzymes in the bruised leaf react with oxygen, and over a few hours the green leaf turns the deep red-brown that gives the red bush its name. The heaps are then dried in the sun. Green rooibos skips that wait. The leaf is dried quickly after cutting, before oxidation can take hold, so it stays close to its original green. Same field, same bush, one decision about whether to let the leaf turn.
The red is made from the antioxidant itself
The red colour is not added to the cup. It is built, chemically, from the very compound green rooibos is prized for. Green rooibos is rich in aspalathin, a flavonoid found in almost no other plant. When the leaf oxidises, the aspalathin is not simply lost. It breaks down, and its breakdown products oxidise further and join into larger brown molecules. Food chemists who traced the reaction found that the nonenzymatic oxidative degradation of aspalathin is what produces the characteristic red-brown colour of processed rooibos. So the redder the cup, the more of its aspalathin has been spent making it red. A glass of red rooibos is, in a sense, a picture of where the antioxidant went.
What it changes in the cup
The two taste different because oxidation builds flavour along with colour. Red rooibos brews to a sweet, woody, faintly honeyed cup, the familiar one most drinkers know. Green rooibos, dried before those notes can develop, is lighter and grassier, closer in character to a green tea, and fresher on the tongue. It is also, by most accounts, the harder cup to love at first. The Cape Town science writer Elsabe Brits, writing in Afrikaans for LitNet, put it bluntly: the green version, she noted, is simply not as pleasant ("die groen weergawe hoegenaamd nie so lekker is nie"), which is much of why red dominates the shelf. Neither carries caffeine, and both are low in tannins, which is why neither turns bitter on a long steep the way black tea will. A forgotten green cup forgives you as readily as a red one.
What it changes in the chemistry
Oxidation costs the leaf most of its aspalathin. In one comparison of unfermented and fermented rooibos, the dihydrochalcones (aspalathin and its companion nothofagin) fell to under a tenth of their starting level once the leaf had been fermented. Measured in the laboratory, green rooibos comes out the stronger antioxidant of the two. In the same study, methanol extracts of green rooibos held about a sixth more total phenolic content than red, and some green samples scored more than double the red on one antioxidant test (FRAP). Green keeps more aspalathin, red keeps less.
What that means for you is smaller than the wellness aisle suggests. Most of these measurements are made in a test tube, not a person, and it is not settled how much of the aspalathin your body actually takes up from the cup. Brits raised exactly this in her "no miracle" piece ("geen wondermiddel"): a great deal of the research sits in cell cultures and rats, the clear human evidence is thin, and you would have to drink an unlikely number of cups to chase a laboratory effect. The Ministry holds the line its own health page holds. Rooibos of either colour is caffeine-free and rich in antioxidants, green a little more so than red. It is a pleasant drink and not a medicine, and the strong health promises made for it online run well ahead of what the evidence supports.
Why green is the rarer cup
Green rooibos is harder to make and less common on the shelf. Stopping oxidation means drying the leaf quickly and carefully, the yield is lower, and the result is a more specialised product that usually costs more than the everyday red. Most rooibos traded in the world is red, the traditional style. Green is the smaller share, sought for its lighter character and its higher aspalathin, and it more often turns up in a tea shop than a supermarket.
Which to reach for
For a first cup, or a last one before bed, red rooibos is the classic and the easier to find. Its sweetness needs nothing added, though it takes milk kindly if you prefer. Green rooibos suits a reader who already knows the red and wants something lighter and grassier, with a little more of the antioxidant the plant is studied for, if you can make peace with the greener taste. Red takes a full boil and the long, forgiving steep rooibos is known for, no real clock to watch. Green wants a lighter hand, water just off the boil and four to six minutes, and is worth pouring closer to fresh rather than left to stew for the better part of an hour, the one place green asks for a touch more care than its easygoing cousin. Neither will turn bitter on you either way. Both are caffeine-free, so the hour is yours whichever you pour.
